Sugar-Free Gingerbread Men!

They still have that beloved gingerbread taste but with zero sugar they also come with zero guilt. Try out this recipe and have fun decorating! I kept the design simple but you could make these a bit more fancy. Enjoy!

So what will you need…

Ingredients (makes 20 gingerbread men):

  • 200g flour
  • 2 tbsp ginger
  • 3 tbsp honey
  • 60g olive spread (butter is an alternative)
  • 1/2 tsp baking powder

Step by step recipe:

1. Preheat the oven to 180ºC.

2. In a mixing bowl, add the flour, ginger and baking powder. Mix together.

3. Add the honey and butter to the mixture and pull together with hands to form a dough.

4. Knead the dough for a few minutes.

5. Roll dough out into a thin sheet – a few millimetres thick. It may be easier to divide the dough into 2 parts and roll each separately.

6. Use a medium sized gingerbread man cutter to cut up the dough into gingerbread men shapes.

7. Cut as many gingerbread men as you can then take the left over dough and re-roll it out and repeat until you’ve used it all up.

8. Place the gingerbread men on a baking tray and space them out evenly.

9. Put them in the oven at 180ºC for 8 minutes.

10. Finish them off by decorating however you choose! I used an icing pen to draw three buttons down the centre but feel free to be more creative. You could use jelly tots as buttons and maybe use the icing pen to make a face.

These sweet treats are cute and delicious! They also make a great activity for kids who would love to decorate them.

Baby Chicken Samosas

These cute samosas make a great snack or side and they taste delicious! Fill them up with your favourite filling, I picked spicy chicken and onion, and you have a perfect miniature snack. I chose to bake mine to make them a bit healthier.

So what will you need..:

Ingredients (makes 12 samosas):

For the dough:

  • 85g flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 15g butter
  • 35g warm water

For the filling:

  • 80g chicken
  • 1/2 tsp chilli powder
  • 1 medium onion (chopped)
  • 2 tsp honey
  • 1 tsp ginger
  • 2 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1 tsp BBQ sauce

Step by step recipe:

1. Place the chicken in a bowl and add the honey, chilli powder, paprika, BBQ sauce and cayenne pepper.

2. Add oil to a frying pan (I prefer to use 1 Cal Spray) along wit the chopped onions, garlic and ginger. Cook for 5 minutes on a medium heat.

3. Add the chicken to the frying pan and cook for a further 5 minutes until the chicken is white on the inside.

4. Once cooked, place the filling in a bowl and set aside for now.

5. Preheat the oven to 190ºC.

6. To prepare the dough, add the flour, sugar, salt and butter into a bowl. Mix well.

7. Slowly add the water and continue to mix. Eventually the mixture should form a dough.

8. Knead the dough well for 5 minutes.

9. Form the dough into 6 equal balls.

10. Roll each ball out using a rolling pin into a circle shape. The dough should only be a few millimetres thick.

11. Cut the circle in half to form 2 semi-circles.

12. Spoon 1 tbsp of the chicken/onion mixture onto one end of one semi-circle.

13. Moisten the edge of the dough with water and fold the dough over the filling to form a triangle shape.

14. Fold up the strip in triangle shapes.

15. Place the rolled up samosa on a baking tray. Continue to roll the other semi-circles and place on a baking tray.

16. Brush the tops of the samosas with milk (I used almond milk).

17. Place the tray in the oven at 190ºC for 20 minutes. Turn them over once after 10 minutes.

Enjoy these baby treats! They make a great lunchbox filler.

Healthy Raspberry Milkshake

A milkshake couldn’t get anymore healthy than this fruity shake and with only 3 ingredients it’s so simple to make.

This pink drink is a great breakfast idea or maybe just something to give you a boost throughout the day. Give it a try!

So what will you need…

Ingredients:

  • 100g fresh or frozen raspberries
  • 100ml almond milk
  • 100g 0% fat Greek yogurt

Step by step recipe:

1. Add all the ingredients into a blender. I use the Breville Blend Active Sports Bottle Blender.

2. Blend the ingredients together until smooth.

This recipe is so quick and easy! I like to pour mine into a glass milk bottle or Mason jar with a straw.

Sweet potato, broccoli & cheese patties (108 calories)!

These sweet and creamy patties are so easy to make and they taste delicious! Although I added broccoli into mine this could easily be substituted for any vegetable.

They’re crispy on the edges and creamy in the middle. Perfect to be eaten alone or as a side. I eat mine with salad and garlic bread.

They are totally guilt-free too at only 108 calories per patty! Enjoy!

So what will you need…

Ingredients (makes 6 patties):

  • 2 medium sized sweet potatoes
  • 150g chopped broccoli
  • 90g grated cheddar cheese
  • pinch of salt and pepper

Step by step recipe:

1. Preheat the oven to 200ºC.

2. Pierce the sweet potatoes with a fork and place them in the microwave for 8 minutes.

3. The potatoes should now be soft. Cut them in half and scoop out the potato into a bowl.

4. Mix the chopped broccoli and grated cheese into the potato as well as a pinch of salt and pepper.

5. Form the mixture into 6 circular patties and place on a baking tray. For each patty I took one heaped tablespoon of mixture and then flattened it out with a spoon.

6. Place these in the oven at 200ºC and bake them for 30 minutes. Turn them over half way through so they turn golden on both sides.

And there you have it! Delicious sweet potato, broccoli and cheese patties. Here I served them with salad and garlic bread.

Feel free to switch the vegetable from broccoli to something else. Why not try onion, pepper or courgette?

Spicy Sweet Potato Wedges

These sweet and crispy wedges are a great alternative to fries and you can easily spice them up with a bit of paprika!

They’re a great side dish, I like to pair them with a Cheesy Chicken Quesadilla (see my blog post) but they’re perfect to have alongside any meal.

So what will you need…

Ingredients:

  • 1 sweet potato
  • 1 tbsp oil (I use sunflower)
  • 1 tbsp bbq sauce
  • 2 tsp paprika

For basic sweet potato wedges, leave out the bbq sauce and paprika but I add these in for a bit of extra flavour.

Step by step recipe:

1. Preheat the oven to 200ºC.

2. Wash your sweet potato and cut it in half length ways. Then slice up the potato into wedge shapes.

3. In a bowl, add 1 tbsp oil, 1 tbsp bbq sauce and the 2 tsp of paprika onto the sweet potato wedges. Mix this well and ensure all wedges are evenly coated.

4. Spread the wedges out on a baking tray.

5. Place them in the oven at 200ºC for 30 minutes. Flip them over after around 15 minutes.

And that’s how you make sweet potato wedges with a kick!

Pair them with your favourite meal and you’re good to go! Here I paired them with a Cheesy Chicken Quesadilla.

Cheesy Chicken Quesadilla

This Mexican dish has rapidly become a favourite of mine. With the toasted tortilla and melt-in-your-mouth cheese, what’s not to love?

After first trying a grilled chicken quesadilla at Tortilla in Kings Cross, I was immediately hooked on them and couldn’t wait to make my own at home.

You can slice them just like a pizza to easily share (or not) and they also work great as a lunchbox filler. I like to pair mine with Spicy Sweet Potato Wedges (check out my blog post on these).

So what will you need…

Ingredients (makes 1 quesadilla):

  • 2 large tortilla wraps
  • 90g cheese
  • 200g diced chicken
  • 1/2 pepper
  • 1/2 onion
  • tomato puree
  • 2 tsp madras seasoning (or any spice of your choice)
  • 1 tbsp plain yogurt (I like to use Greek yogurt)

Step by step recipe:

1. Slice the onion and pepper into thin slices.

2. Next prepare the chicken. Add the madras flavourings (or whatever spices you choose) and the 1 tbsp of plain yogurt to the chicken and mix well.

3. Now you want to cook your vegetables. I prefer to use Fry Light 1 Cal Spray as an alternative to oil. Cook the onions and peppers for a few minutes in a frying pan on a high heat until they’re soft.

4. Once the vegetables are soft, add the chicken. Cook for around 10 minutes until the chicken is white all the way through.

5. You can now switch the heat off and transfer the chicken, onions and peppers into a bowl.

6. Take one tortilla and spread some tomato puree on one side.

7. Place the tortilla in a large frying pan on a medium heat.

8. Spread evenly the majority of the cheese over the first tortilla.

9. Now add the chicken, onion and pepper onto the tortilla. You can also sprinkle to remainder of the cheese on top of this.

10. Add the second tortilla on top and press down the edges. As the cheese melts it should work like a glue, sticking the 2 tortillas together. Cook the tortilla for a few minutes until it starts to go slightly crispy and then flip it over and cook for a few more minutes.

And that’s your quesadilla! Transfer it onto a plate and slice it up!

I think this dish goes perfectly with Spicy Sweet Potato Wedges.

40 Calorie Chocolate Brownies!

These rich, dark, chocolate brownies are sugar-free and at only 40 calories per brownie, completely guilt-free. They fill that chocolatey void and are perfect for those chocolate cravings. Keep on reading to find out more.

So what will you need…

Ingredients (makes 9 brownies):

  • 180g 0% fat Greek yogurt
  • 60ml almond milk
  • 65g cocoa powder
  • 65g Truvia (or other natural sweetener)
  • 1 medium egg
  • pinch of salt
  • 1 tsp baking powder

Step by step recipe:

1. Start by pre-heating the oven to 200°C.

2. Next prep the mixture. Mix the Greek yogurt, Truvia, salt and baking powder together in a bowl. Then add the egg and almond milk.

3. Finally sift in the cocoa powder and mix well.

4. Line a small square baking tray (around 6″ by 6″) with greaseproof paper.

5. Pour the mixture into the tray.

6. Bake the brownies for 20 minutes at 200ºC.

7. After 20 minutes take them out and allow them to cool. Divide the tray up into 9 brownies – each one being 40 calories.

These yummy brownies taste great with some 0% fat Greek yogurt on the side or, a slightly less healthy option, ice cream!

For decoration I like to top them with a few chocolate stars or a sprinkling of icing sugar.

Spicy BBQ Chicken Egg Fried Rice (460 calories)

For my first blog post I decided to write about one of my favourite recipes at the moment. It’s spicy, smoky and full of flavour – just how I like it. It’s also quite healthy – a huge bonus! This dish comes in at just under 460 calories per serving!!

Spicy BBQ Chicken Egg Fried Rice

So what will you need…

Ingredients (serves 2):

  • 150g brown rice
  • 1 medium onion
  • 1 medium pepper
  • 100g mushrooms
  • 360g diced chicken breast
  • 2 medium eggs
  • 3 tsp chilli powder
  • 2 tsp cumin
  • 4 tbsp BBQ sauce

Step by step recipe:

1. Start by chopping up your vegetables. Slice the onion into thin pieces and chop the pepper into chunks (I used half a red pepper and half a green pepper). Slice the mushrooms into segments.

2. Time to prepare the chicken! Take your diced chicken in a bowl and add the chilli powder, cumin and 2 tbsp of BBQ sauce. Mix well.

3. If you already have cooked rice you can skip this step! If not place the uncooked rice in a pan and cover it with water. Put it on a high heat until the water starts to boil then turn the heat down slightly and leave the rice to cook. It should take around 20 minutes. You can do the next steps while the rice cooks.

4. Crack the eggs into a cup and whisk them together with a fork. Proceed to scramble the mixture in a small frying pan. Heat the frying pan up to a high heat and pour in the mixture. Keep stirring gently and break up the mixture to form chunks of egg. Optional: add black pepper for extra flavour.

5. Now it is time to cook! Place a large frying pan on a high heat and begin frying the onion and pepper. I like to use the Fry Light 1 Cal Sunflower Oil Cooking Spray instead of oil. Continue to stir for around 5 minutes.

6. Next add the mushrooms and continue to stir for another few minutes. At this point I like to add the 2 remaining tbsp of BBQ sauce and mix it into the vegetables.

7. At this point you can add the chicken into the pan with the vegetables and cook for about 10 minutes until the chicken is white all the way through. Optional: add rocket leaves.

8. Once your chicken is cooked you can put the pan on a low heat and add the scrambled egg and rice. Mix well. You are now ready to serve.
